So who doesn’t like the occasional dessert? Yet often these can be laden with full fat and heaps of sugar, and the minute we eat one we know we are going to have to run a marathon to burn if off!!
So if you do have a sweet tooth, I have put together some super tasty low fat and low calorie yummy puddings from a Skinny Raspberry and Chocolate Ice Cream to Skinny Sticky Orange pudding that will satisfy the sweetest tooth, yet still leave you with that flat tummy, with the added bonus of the fact that they are also full of vitamins. And not only are they super kind on our waist lines, but also good for our skin and hair as they are stuffed with antioxidants.
Skinny Raspberry & Chocolate Ice-Cream
Handful of Raspberries, 1 small tub of fat free Greek Yoghurt, 1 tspn of Honey, 1 small square of Dark Chocolate
Into a food processor put raspberries, yoghurt, chocolate and 1 tspn of honey. Process until smooth. Spoon mixture into freezer-proof container. Let freeze and eat when softly frozen.
Calories 298 Fat 7.4 grams
Benefit: Raspberry contains anti-oxidant vitamins like vitamin A, and vitamin E.
Skinny Apple Crumble
1 Apple peeled and cored, handful of oats, handful of bran flakes, 2 tblsps of semi-skimmed milk, 3 tblsps of apple juice, 1 tspn of cinnamon, 1 tspn of honey, handful of chopped nuts.
Put oats into a mixing bowl, add 2 tblsp of semi-skimmed milk, 1 tspn of honey, bran flakes and mixed nuts. Cover and leave to stand for 30 minutes. Pre-heat oven to 200C/ 400F/ Gas mark 6. Thinly slice apple and lay in a baking dish, then cover with mixture. Cook for approximately 20 minutes.

Benefit: Apples are a good source of immune-boosting vitamin C.
Skinny Grilled Cinnamon Pear with Ricotta
1 Pear, 1 tblsp of low fat Ricotta cheese, pinch of cinnamon powder
Place one small pear, halved and cored, under grill for 8-10 minutes. Combine teaspoon of low fat ricotta cheese with a sprinkling of cinnamon. Remove grilled pears and top with cinnamon and ricotta mixture.
Calories 109 Fat 4.1 grams
Benefit: Studies have shown that just 1/2 teaspoon of cinnamon per day can lower LDL cholesterol.
Skinny Sticky Orange pudding
1 Orange, 1 tspn of crushed pistachios, 1 tspn of honey, 1 tspn of low fat crème fraiche
Peel orange, then finely cut. Make nice neat slices and be sure to remove pips and cut away any of the white pith. Lay and stack slices into dessert bowl. Now in a small bowl mix 1 tsp of honey with a pinch of cinnamon. Pour mixture over oranges and then sprinkle your crushed pistachios. Then for a little treat add teaspoon of low fat crème fraiche (if no one is looking!!)

Benefit: Oranges are full of antioxidants which help protect the skin and give us that youthful glow.
