50 grams of brown rice
1/4 yellow pepper
1/4 red pepper
1/4 green pepper
Small red onion
Handful of cherry tomatoes
1 tbsp of Greek natural yoghurt
Few mint or coriander leaves
Pinch of smoked paprika
Cook your brown rice as instructed on the packet.
Then wash thoroughly your peppers, onion (after peeling), tomatoes, and blueberries.
Then finely slice all the ingredients into tiny squares.
Add to your rice mixing all together.
Finely chop up either the fresh mint or fresh coriander, then mix into your Greek yoghurt in a small bowl.
Place the mixed rainbow jewelled rice on a plate and add a dollop of the flavoured yoghurt to the top, then sprinkle on your smoked paprika and garnish with your chosen fresh herb.
